Young US Cheesecake Recipe

Heat oven to 180c

Mix 220g crushed biscuits with 100g meted butter and press down firmly in a 20cm lined baking tin and leave to chill in fridge for 30-60 mins

Mix 700g soft cheese, 120g caster sugar, 3 eggs, 1tsp vanilla extract together and place in baking tin

Bake in a bain-marie for approx 40 mins until the cheesecake is light brown


Butterscotch topping:

Gently heat 60g butter, 45g light brown soft sugar, 120g icing sugar, 2tbsp whole milk and 1 tsp vanilla extract, mixing until smooth

Pour onto a cooled cheesecake and refridgerate
